These wines are made by Matt Thomson at the Cantina di Monteforte. Verona's. Situated next to the Soave zone in the Val d'Alpone the Garganega grapes for this wine were grown on the hillside vineyards. With soils of volcanic origin, the vineyards have excellent south east exposure. Producing grapes with a lovely aromatic depth, the hillside sites give the fruit great concentration. The Trebbiano is all Trebbiano di Soave from spalliera-trained vineyards.
2014 was one of the trickiest vintages seen since 1984. Wines from around Verona look good and are more aromatic than last year. In general, the whites have a higher acidity than seen in recent years so need a bit more time on their lees to fatten out. Without the addition of sulfur the grapes were hand harvested, destemmed and crushed then pumped to the press. The juice was chilled immediately and naturally settled. In order to retain freshness and fruit flavors, cultured yeasts were added to initiate fermentation, which took place at around 14°C. To preserve fresh fruit character the wine was bottled young.
