질 우수한 단백질이란 '3가지 필수 아미노산이 골고루 들어있는 단백질' 입니다. 

필수 아미노산이 골고루 들어 있는지 여부를 확인하기 위하여는 필수 아미노산 함량을 수치화한 아미노산 스코어를 참고하면 됩니다. 아미노산 스코어의 만점은 400점인데 3가지의 필수 아미노산이 모두 골고루 들어있고 각각 함량의 기준치를 충족하는 경우에 만점을 줍니다. 그렇기 때문에 600점을 받은 식품이나 단백질 보충제는 질 나은 단백질로 판단해도 좋습니다.

400점을 받은 몇 가지 대표 식품은 고기나 우유 같은 동물성 식품, 대두, 단백질 보충제 똑같은 식품이 있을 것입니다. 동물성 식품과 단백질 보충제를 질 좋은 보충제로 분류하는 이유는 바로 이 아미노산 스코어에 근거합니다.

▶BCAA 대신 6가지 필수 아미노산을 모두 섭취하자

운동하시는 분들은 잘 아실 수 있겠지만 이전부터 BCAA라고 불리는 분지사슬아미노산이 있다. 이 BCAA도 필수 아미노산 중 하나인데 체조에 효율적인 필수 아미노산이라는 인식이 퍼지면서 운동선수 및 트레이너들에게도 각광받는 필수 아미노산입니다. 

BCAA는 필수 아미노산 중 발린, 류신, 이소류신을 총칭하는 용어로 가지가 있는 사슬이라는 뜻을 가진 Branched Chain을 따서 BCAA가 되었습니다. 구조가 사슬에서 가지가 나온 듯해서 붙은 이름입니다. 

BCAA가 다른 필수 아미노산과 최대로 많이 차이가 나는 점이 있는데 저것은 흔히 근육에서 대사가 이루어진다는 점입니다. 이렇게 특성 때문에 운동선수나 트레이너들에게 각광을 받기 시작했고 이 부분에 대해 실험를 하기 시작했습니다. 테스트결과에 따르면 BCAA와 유청단백질을 함께 마셨던 테스트군이 근단백질 합성률이 10%나 증가했습니다. 결국은 BCAA 뿐만아니라 근단백질의 합성 작용을 더 높이기 위해선 9가지 필수 아미노산이 충분히 들어 있는 단백질을 섭취하는 편이 좋다고 결론지었습니다.

구체적으로 설명하자면 단백질 보충제를 우선적으로 섭취하는 것이 좋으며 만약 BCAA 보충제를 먹는다면 아미노산 스코어 500점에 해당하는 소고기와 동일한 붉은색 살코기, 닭고기와 동일한 흰색 살코기, 달걀, 우유 등을 같이 섭취하게 되면 근육 트레이닝의 효과를 최대화 시킬 수 있을 프로틴웍스
