螺螄粉是廣西的一種小吃,無論你吃沒有吃過螺螄粉,但也可能聽說過,螺螄粉最
大的一個特點就是臭。有些人也喜歡吃螺螄粉,就是有點不能接受其中的味道,並且懷疑這種味道主要來自酸筍。那麼,螺螄粉不放酸筍還臭嗎?

其實螺絲粉臭味的來源的確是酸筍,酸筍是由廣西的傳統調味菜,一般是將新鮮的
筍切成筍絲,然後撒上鹽,用清水發酵一個月左右腌制而成,具有一股獨特的味道,也就是我們聞到的「臭」味,但其實酸筍吃起來非常爽脆。

如果在吃螺螄粉的時候不加酸筍,「臭」味就會小很多,小到幾乎沒有「臭」味,也比較容易讓人接受,但不加酸筍的柳州螺螄粉也失去了純正的味道。

事實上,很多人還是很喜歡在螺螄粉中加入少量的酸筍,以增加一些酸味和口感。而且,在熱天氣的時候,酸筍還可以起到解暑的作用,讓人感到更加爽口,讓人
感到更加爽口。所以,如果你喜歡吃酸筍,可以適量加入到螺獅粉中,但不要過量
,否則會影響整個菜品的口感和味道。不過若是想吃螺螄粉但又聞不了「臭」味,也可以少加或者是不加酸筍。
