The week between Christmas and New Year's is one of my favorite times of the year. This week, my tiny family will be watching movies, playing games, and sleeping in! Enjoy, My handmade kinda bisquick banana bread muffins recipe is one of my "secret" recipes that I use to amaze overnight visitors. By a long shot, it outperforms any 'box' on the market and is almost as simple.

Preheat the oven to 400 degrees. A 12-muffin pan should be lined with parchment paper or greased. In a large mixing basin, combine the bananas, oil, egg, and sugar. Just until the baking mix, nuts, and chocolate chips are wet, stir in the baking mix, nuts, and chocolate chips (batter will be lumpy). Fill muffin tins halfway with batter. Pre-heat the oven to 350°F and bake for 15 minutes, or until golden brown. Cool for 5 minutes in the pan before transferring to a wire rack to cool completely. Please serve warm and with milk.Bananas that are ripe freeze nicely. To keep the bananas from browning, mash them with 1 teaspoon lemon juice per cup. Freeze 2 cup portions for this recipe.
