So let's get started. Here's what you'll need:
• 500 gms of white fish fillets (cod or hake work well)
• 1 large onion, chopped
• 2 cloves of garlic, minced
• 1 teaspoon of ginger-garlic paste
• 2 tablespoons of tomato puree
• 1 red chilli, finely chopped (or more depending on how hot you want it!)
• 2 teaspoons of ground turmeric
• 1 teaspoon of ground coriander powder
• 1/2 teaspoon of ground cumin powder
• 3 tablespoons of coconut milk or cream
• 2 tablespoons of vegetable oil or ghee (clarified butter)
To make the Goan fish curry:
1. Heat the oil/ghee in a pan over medium heat. Add the onions and fry until they turn golden brown. Then add the garlic and ginger-garlic paste and fry for another minute.

2. Now add the chilli, turmeric, coriander powder and cumin powder and stir until fragrant (about 30 seconds). Make sure not to burn the spices!

3. Add the tomato puree and mix everything together well before adding in the fish pieces. Fry for a few minutes before pouring in the coconut milk/cream. Simmer over low heat while stirring every now and then until the sauce thickens to your desired consistency (add some water if needed).

4. Once done, turn off the heat and wait for it to cool down for about 5 minutes before serving it with hot naan bread or jasmine rice! Enjoy!
