How does Coffee get its taste and flavor notes?

Coffee taste and flavoring notes occur from a variety of components which we’ve classified down below. The important thing to remember is that no synthetic flavorings are added to our coffee, the flavor notes are all down to how the coffee has been grown, processed, and roasted. Coffee Plants

When selecting which type of coffee plants to use, coffee plant growers consider a number of factors - such as availability, yield, and disease permanence. Altitude

There’s an essential reason why we define the altitude at which each of our coffees is grown - it has a huge influence on the rate the coffee cherries get mature. At higher altitudes, farmlands usually result in the cherries maturing more gradually and this results in them generating more complex flavor and acidity profiles.

Processing Methods

Likewise, the method with which the cherries are processed (taken from cherry to green bean), plays a huge part in its flavor. Most coffee processing takes place on the farm itself, using one of four different methods - you’ll see which one has been used, noted on the accompanying card for each coffee.  They are:

Washed - these coffees tend to have great clarity of flavor, with crisp fruit acidity and rich dark chocolate flavors.

Pulped natural - these coffees are on the whole a little sweeter, with lower acidity and ripe fruit and nutty flavors. Natural - a coffee processed this way is often intensely sweet with low acidity. Tasting notes of stewed fruits, milk chocolate, and cocoa powder are often present.

Honey - this method produces moderately sweet coffees, with low acidity and excellent cup clarity. Flavors include plum, cherry, hazelnuts, and cashews.

Roast

We tailor the roast level to every individual coffee depending upon what characteristics it has. A darker roast can mask certain tastes, so you’ll notice we often use lighter roasts in order to protect the complexity of flavor.

There are many different aspects to consider when choosing your coffee! Deciding what flavors will suit your personal tastes may not necessarily be immediately obvious - that’s why we created four different categories for our coffee, to make it simpler to narrow down what will work for you.
