酸筍里的這倆是「罪魁禍首」 螺螄粉是上世紀七八十年代誕生於廣西柳州的一種街頭小吃。螺螄與豬骨熬成的湯鮮美絕倫,配上滇桂一帶久負盛名的米粉,以及炸花生、辣椒、木耳、酸筍等調味品,使得這種食物集酸、辣、香、鮮於一身。
舉凡人們熟知的臭味食品,例如臭豆腐、豆汁兒、腌海雀等,都是經過發酵才會出現標誌性的內味兒。而螺絲粉中唯一經過發酵的食材,就是酸筍。
酸筍的製作過程比較粗放,選擇適當大小的竹筍,用鹽水浸泡,放置十天即可出酸味。酸筍的發酵環境並沒有完全隔絕氧氣,經過需氧菌和厭氧菌的通力合作,筍中的糖類和蛋白質被發酵,轉化為各種氨基酸和有機酸、醛、醇等物質。 究竟是什麼造就了酸筍的內味兒呢?…
