螺絲粉是廣西的一種小吃，無論你吃沒有吃過螺螄粉，但也可能聽說過，螺螄粉最

大的一個特點就是臭。有些人也喜歡吃螺螄粉，就是有點不能接受其中的味道，並且懷疑這種味道主要來自酸筍。那麼，螺螄粉不放酸筍還臭嗎？

其實螺螄粉臭味的來源的確是酸筍，酸筍是由廣西的傳統調味菜，一般是將新鮮的

筍切成筍絲，然後撒上鹽，用清水發酵一個月左右腌制而成，具有一股獨特的味道，也就是我們聞到的「臭」味，但其實酸筍吃起來非常爽脆。

如果在吃螺螄粉的時候不加酸筍，「臭」味就會小很多，小到幾乎沒有「臭」味，也比較容易讓人接受，但不加酸筍的柳州螺螄粉也失去了純正的味道。
